Anko Recipe — Japanese Sweet Red Bean Paste

Homemade anko — the sweet red bean paste that shows up in manju, mochi, shave ice, and zenzai across Local Hawaii. Made two ways: tsubuan (chunky) and koshian (smooth), both from just azuki beans, sugar, and salt.
